1 Take the grey sugarpaste and marble pieces of black into it, knead until you can still see some black streaks left in the sugarpaste.

2 Roll out the marbled sugarpaste and cover the 18cm (7in) cake.

MOODY BLUES CAKE STEP 2

3 Crumple up a sheet of aluminium foil.

MOODY BLUES CAKE STEP 3

4 Use the foil to texture the grey tier by pushing the foil against the sides and top of the cake.

MOODY BLUES CAKE STEP 4

5 Take the two top tiers and stack them. Airbrush both tiers with the navy airbrush colour.

MOODY BLUES CAKE STEP 5

6 Now airbrush in patches using the brown airbrush colour. This coat should be very patchy and light.

MOODY BLUES CAKE STEP 6

Top Tip! Depending on how rough or smooth you want the concrete effect to be, you can adjust the pressure you use with the foil.

7 Using the wipeout sheet, sponge off some of the airbrush colour. It is best to do this before the colour dries on the tiers.

8 Take another sheet or foil approximately 30 x 30cm (12 x 12in) and crumple it up and then flatten it out again.

MOODY BLUES CAKE STEP 8

9 Melt the chocolate in the microwave in thirty second bursts until it is liquid. Spread it on the foil using a palette knife, the set aside to firm up. You can nput it in the fridge if necessary.

MOODY BLUES CAKE STEP 9

Top Tip! Set your microwave to medium when melting chocolate as it easy to overheat and ruin your chocolate.

10 Before the chocolate completely sets, score lines vertically as shown.

MOODY BLUES CAKE STEP 10

11 Once the chocolate is firm you can remove it from the foil – so satisfying!

MOODY BLUES CAKE STEP 11

12 Use the gold highlighter dust and some alcohol to make a paint. Use a flat brush to paint the roughest side of the chocolate pieces. No need to completely coat it, some chocolate showing through adds dimension.

MOODY BLUES CAKE STEP 12

Top Tip! Chocolate makes an excellent glue. You can use freeze spray to make it set faster.

13 Use some melted chocolate as a glue, spread it on the back of the chocolate pieces.

MOODY BLUES CAKE STEP 13

14 Attach the pieces to the cake.

MOODY BLUES CAKE STEP 14

15 Roll out some navy sugarpaste.

MOODY BLUES CAKE STEP 15

16 Paint the sugarpaste with the gold paint. Allow to dry slightly.

MOODY BLUES CAKE STEP 16

17 Use a rolling pin to distress the sugarpaste, this gives the impression of silk onto the sugarpaste, adding even more texture.

MOODY BLUES CAKE STEP 17

18 Arrange the sugarpaste onto the board, creating folds at the outer edges.

MOODY BLUES CAKE STEP 18

19 Stack the cakes onto the board and adjust the sugarpaste in the board.

MOODY BLUES CAKE STEP 19

20 Trim off any excess sugarpaste.

MOODY BLUES CAKE STEP 20

21 Attach a ribbon to the board for the final finish.
